My camper has most of the wood work crumbling and falling apart. I want to pull it all out and use the orginals as templates. What is the best material/wood to use? Any useful tips welcome.

Using original for templates is a good idea. If you want to use more modern materials kitchen standard waterproof- Melamine or similar is very good or you can use pine if you want the more traditional look.
There are quite a few posts on here re interiors and photos
